Step-by-Step Instructions
  1. Prepare the Tomatoes: Finely chop the ripe tomatoes and place them in a large mixing bowl.
  2. Mix in the Aromatics: Add the chopped red onion, minced garlic, lemon zest, dill, and parsley. Stir gently to combine.
  3. Create the Batter: Sift in the plain flour and baking powder along with salt and pepper, mixing well until a cohesive batter forms.
  4. Heat the Oil: In a frying pan, heat about half an inch of olive oil over medium heat until shimmering, about 5 minutes.
  5. Fry the Fritters: Drop heaping tablespoons of batter into the hot oil and fry for 2-3 minutes on each side until golden brown.
  6. Drain and Serve: Remove fritters from the oil and drain on paper towels. Serve hot with lemon juice or tzatziki.
