Ingredients
  

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cream cheese softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 2 tablespoons erythritol or your preferred sweetener
  • 1 tablespoon butter melted (for brushing)

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well.
  3. In a separate bowl, blend the softened cream cheese, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the cream cheese mixture, stirring until a dough forms.
  5. Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  6. In a small bowl, mix the cinnamon and erythritol together. Sprinkle this mixture evenly over the rolled-out dough.
  7. Carefully roll the dough from one long side to the other, creating a log shape. Slice the log into 1-inch pieces.
  8. Place the roll-ups on the prepared baking sheet and brush the tops with melted butter.
  9. Bake for 15-20 minutes or until golden brown and crispy. Allow to cool slightly before serving.
