Method
 

  1. In a large bowl, combine the chicken wings or drumsticks with salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper if using. Mix well to coat the chicken evenly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  2. In a separate bowl, whisk together the flour, cornstarch, and baking powder. This mixture will help create a crispy coating.
  3. Remove the chicken from the refrigerator and dredge each piece in the flour mixture, ensuring they are fully coated. Shake off any excess flour.
  4. In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F.
  5. Carefully add the coated chicken pieces to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 8-10 minutes, or until golden brown and cooked through, turning occasionally for even cooking.
  6. Use a slotted spoon to transfer the fried chicken to a paper towel-lined plate to drain excess oil.
  7. Once all the chicken is fried, garnish with chopped green onions and serve hot.
