Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons curry powder
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1/2 cup diced celery
  • 1/2 cup diced apples such as Granny Smith
  • 1/4 cup raisins or dried cranberries
  • 1/4 cup chopped walnuts or pecans optional
  • Salt and pepper to taste
  • Lettuce leaves for serving optional

Method
 

  1. In a large mixing bowl, combine the mayonnaise, Greek yogurt, curry powder, honey, and lemon juice. Mix until smooth and well combined.
  2. Add the shredded chicken, diced celery, diced apples, raisins or cranberries, and nuts (if using) to the bowl. Stir gently to coat all ingredients with the dressing.
  3. Season with salt and pepper to taste. Adjust the curry powder or honey if you prefer a stronger flavor or more sweetness.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve the curried chicken salad on a bed of lettuce leaves or in a sandwich.
