  • 8 slices of thick-cut bread such as brioche or challah
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract for egg mixture
  • 1 tablespoon butter for cooking
  • Chocolate chips for garnish, optional
  • Chopped pistachios for garnish, optional
  • Maple syrup for serving

Method
 

  1. In a medium bowl, combine the ricotta cheese, powdered sugar, 1/2 teaspoon vanilla extract, and cinnamon. Mix until smooth and well combined. Set aside.
  2. In another bowl, whisk together the eggs, milk, and 1 teaspoon vanilla extract until fully blended.
  3. Take one slice of bread and spread a generous amount of the ricotta mixture on one side. Top with another slice of bread to create a sandwich. Repeat with the remaining slices.
  4. Heat a large skillet or griddle over medium heat and add the butter, allowing it to melt and coat the surface.
  5. Dip each sandwich into the egg mixture, ensuring both sides are well coated. Allow excess to drip off.
  6. Place the coated sandwiches in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
  7. Remove from the skillet and let cool slightly. Slice each sandwich in half diagonally.
  8. Serve warm, garnished with chocolate chips, chopped pistachios, and a drizzle of maple syrup.
