  • 1 inch Ginger fresh or ground
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne adjust to taste
For Sweetness and Flavor
  • 2 tablespoons Maple Syrup or honey for non-vegan
  • 4 cups Vegetable Stock or water
  • 2 tablespoons Lemon Juice fresh, added before serving

  • 1 tablespoon Parsley optional, for garnish

Step-by-Step Instructions
  1. Combine all ingredients—lentils, diced tomatoes, carrots, onion, celery, sweet potato, and spices—into the Instant Pot. Add vegetable stock and maple syrup, stir gently to combine.
  2. Secure the lid, set the valve to 'sealing', and select the pressure cook function for high pressure for 15 minutes.
  3. Once cooking is complete, let the Instant Pot naturally depressurize for 10 minutes. Then, carefully release any remaining pressure by turning the valve to 'venting'.
  4. Open the lid, stir the lentils, and drizzle with lemon juice before serving. Optionally garnish with parsley.
