Method
 

Step-by-Step Instructions
  1. Blend 1 cup of cooked chickpeas and 1 cup of pitted dates in a food processor until creamy and smooth.
  2. Add 1/2 cup of oats, 1/4 cup of nut butter, 1 tablespoon of honey or maple syrup, 1 teaspoon of vanilla extract, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt. Blend until fully combined.
  3. Fold in 1/4 cup of dark chocolate chips by hand if using.
  4. Line an 8x8-inch baking dish with parchment paper. Spread the mixture evenly in the dish.
  5. Refrigerate for at least 1 hour to set.
  6. Slice into bars and serve.
