- Preheat your oven to 350°F (175°C) and prepare a greased 9x5 loaf pan lined with parchment paper.
- In a mixing bowl, combine softened vegan butter, all-purpose flour, brown sugar, granulated sugar, and a sprinkle of cinnamon until it resembles crumbly sand. Chill the streusel topping.
- In a large bowl, mix pumpkin purée, oil, brown sugar, and maple syrup until smooth using an electric mixer or whisk.
- Sift together the all-purpose flour, pumpkin pie spice, baking powder, baking soda, and salt into the wet mix. Fold gently until combined.
- Fold in semi-sweet chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan, smooth the top, and sprinkle the chilled streusel on top, pressing down lightly.
