Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with foil or spraying it with cooking spray.
  2. Melt the butter in a microwave-safe bowl for about 1 minute. Whisk in the granulated sugar, light brown sugar, and vanilla extract until fully combined.
  3. Add the all-purpose flour, rolled oats, and a pinch of salt to the butter mixture, stirring gently. Reserve a heaping cup of this mixture for the topping.
  4. Press the remaining mixture firmly into the bottom of the prepared pan to create an even layer.
  5. Spread the raspberry preserves evenly over the crust, covering it to the edges.
  6. Sprinkle the reserved crumb mixture generously over the raspberry filling, clumping some together for larger crumbs.
  7. Bake in the preheated oven for about 30 minutes until the edges are slightly set and golden.
