- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with foil or spraying it with cooking spray.
- Melt the butter in a microwave-safe bowl for about 1 minute. Whisk in the granulated sugar, light brown sugar, and vanilla extract until fully combined.
- Add the all-purpose flour, rolled oats, and a pinch of salt to the butter mixture, stirring gently. Reserve a heaping cup of this mixture for the topping.
- Press the remaining mixture firmly into the bottom of the prepared pan to create an even layer.
- Spread the raspberry preserves evenly over the crust, covering it to the edges.
- Sprinkle the reserved crumb mixture generously over the raspberry filling, clumping some together for larger crumbs.
- Bake in the preheated oven for about 30 minutes until the edges are slightly set and golden.
- Remove from oven and allow to cool at room temperature for at least 2 hours before slicing.
