- Heat 2 tablespoons of olive oil in a large sauté pan over medium heat. Add 1 diced onion and 1 diced red bell pepper. Sauté for about 5 minutes.
- Add 3 minced garlic cloves, 1 teaspoon of paprika, 1 teaspoon of cumin, and 1 teaspoon of chili powder. Cook for an additional minute.
- Pour in a can of whole peeled tomatoes. Break down the tomatoes and mix with vegetables and spices. Season with salt and pepper and let simmer for 10 minutes.
- Create small wells in the sauce and crack 4 eggs into each. Cover and cook on low heat for 5 to 8 minutes.
