Method
 

Preparation Steps
  1. Roll out your pie crust on a lightly floured surface to about 1/8-inch thickness and cut out shapes for mini pies.
  2. Preheat oven to 350°F (175°C).
  3. In a mixing bowl, combine blueberries, sugar, and lemon juice. Toss together and let sit for 10 minutes.
  4. Take one pie crust shape, add filling, and top with another crust. Crimp edges to seal.
  5. Arrange pies on a baking sheet and bake for 20-25 minutes until golden brown.
  6. Cool mini pies completely on a wire rack for about 30 minutes.
  7. Scoop ice cream and place it between two mini pie crusts to assemble sandwiches.
  8. Freeze sandwiches on a parchment-lined sheet for at least 1 hour to set.
