  1. Prepare the Pastry: Remove gluten-free puff pastry from the refrigerator to reach room temperature for about 20–30 minutes.
  2. Roll Out the Dough: Flour your counter and sprinkle sugar over it. Roll the dough into a rectangle about ⅛ inch thick.
  3. Fold the Pastry: Fold the pastry in half lengthwise, then fold each side towards the center and then fold into a log shape.
  4. Chill the Dough: Wrap the folded pastry tightly in plastic wrap and chill in the refrigerator for 30–60 minutes.
  5. Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a parchment-lined baking sheet.
  6. Slice the Pastry: Use a sharp knife to slice the chilled dough into ½-inch thick pieces.
  7. Sugar the Slices: Coat both sides of each slice in extra sugar and place them on the baking sheet.
  8. Bake to Perfection: Bake for 20 minutes, flip the palmiers, and bake for an additional 10 minutes until golden brown.
