- Begin by brewing two cups of Earl Grey tea and allow it to cool. Brew one cup of strong coffee and let it come to room temperature. Mix the Earl Grey tea and coffee in a shallow dish.
- In a bowl, whip one cup of heavy cream on medium speed until soft peaks form, about 3-4 minutes. Set aside.
- In another bowl, combine one cup of mascarpone cheese with half a cup of granulated sugar. Mix until smooth and creamy, about 2-3 minutes. Fold in the whipped cream.
- Dip each ladyfinger into the tea-coffee mixture for just a second on each side. Layer in a rectangular dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover the dish tightly and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust the top with cocoa powder. Serve chilled, garnished with mint.
