Ingredients
  

For the Pastry
  • 1 package Puff Pastry store-bought or homemade
For the Filling
  • 8 ounces Goat Cheese or Brie for a milder taste
  • 1 cup Caramelized Onions store-bought or homemade
  • 1/2 cup Fig Jam can substitute with raspberry or apricot jam
For the Finish
  • 1 large Egg beaten for egg wash

Method
 

Steps
  1. Preheat oven to 400°F (200°C). Roll out puff pastry to 1/8 inch thick and cut circles.
  2. Brush pastry edges with egg wash, place on parchment-lined baking sheet, and freeze for 15 minutes.
  3. Add caramelized onions to the center of each pastry circle.
  4. Blind bake the pastry for 10 minutes until edges start to rise.
  5. Pipe fig jam over onions and crumble goat cheese on top.
  6. Bake for an additional 15-20 minutes until golden brown.
  7. Let cool for a few minutes, then garnish with fresh herbs.
  8. Serve warm or at room temperature on a platter.
