Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound total)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups broccoli florets fresh or frozen
  • 1 cup cooked brown rice or quinoa
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill optional

Method
 

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a small bowl, mix together olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture all over the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
  4. While the chicken is resting, steam the broccoli florets until tender, about 4-5 minutes. If using frozen broccoli, follow package instructions.
  5. In a separate bowl, combine Greek yogurt, mayonnaise, minced garlic, lemon juice, and dill (if using). Mix until smooth to create the creamy garlic sauce.
  6. To assemble the bowls, divide the cooked brown rice or quinoa among four bowls. Top with sliced grilled chicken and steamed broccoli. Drizzle with creamy garlic sauce before serving.
