- Preheat your grill to about 425°F (218°C). Clean the grill grates to prevent sticking.
- Season the sliced chicken breasts generously with salt and pepper on both sides.
- Cook the bacon on indirect heat for about 7-8 minutes, flipping it midway.
- Grill the chicken for about 3-4 minutes on each side, ensuring it reaches an internal temperature of 165°F (74°C).
- Prepare a cookie sheet with slices of onion and pepper; add these to the grill when you flip the chicken.
- In the last 1-2 minutes, place the cheese atop the chicken to melt it as the veggies soften.
- Remove everything from the grill, slice the ciabatta rolls, and toast them briefly until golden.
- Spread mayonnaise on the rolls and layer with chicken, bacon, onions, and peppers.
- Serve warm with sweet potato fries or a garden salad.
