  • 8 slices Uncooked Smoked Bacon Turkey bacon works as a healthier alternative
  • 1 Red Pepper Seeded and cut into strips, bell peppers of any color can be used
  • 0.5 small Red Onion Sliced, grilled white or yellow onion can be a great alternative
  • as needed Mayonnaise Can swap with Greek yogurt or omit for a lighter version
  • to taste Salt & Pepper Essential for seasoning the chicken and vegetables

Method
 

Directions
  1. Preheat your grill to about 425°F (218°C). Clean the grill grates to prevent sticking.
  2. Season the sliced chicken breasts generously with salt and pepper on both sides.
  3. Cook the bacon on indirect heat for about 7-8 minutes, flipping it midway.
  4. Grill the chicken for about 3-4 minutes on each side, ensuring it reaches an internal temperature of 165°F (74°C).
  5. Prepare a cookie sheet with slices of onion and pepper; add these to the grill when you flip the chicken.
  6. In the last 1-2 minutes, place the cheese atop the chicken to melt it as the veggies soften.
  7. Remove everything from the grill, slice the ciabatta rolls, and toast them briefly until golden.
  8. Spread mayonnaise on the rolls and layer with chicken, bacon, onions, and peppers.
  9. Serve warm with sweet potato fries or a garden salad.
