  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 tablespoon vegetable oil
  • Wooden skewers soaked in water for 30 minutes

Method
 

  1. In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, and red pepper flakes. Whisk until the sugar is dissolved.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken pieces onto the soaked wooden skewers.
  5. Brush the grill grates with vegetable oil to prevent sticking. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
