- Preheat your oven to 350°F (175°C) and lightly spray a 9” x 13” baking pan with nonstick cooking spray.
- In a large non-stick skillet, heat a tablespoon of olive oil over medium heat. Add chopped onions and sliced mushrooms along with a pinch of salt. Sauté for 6-8 minutes until onions are translucent and mushrooms are browned.
- Stir in chopped spinach and cook for an additional 2-3 minutes until the spinach wilts. Transfer mixture to the prepared baking pan.
- In a mixing bowl, combine eggs, cottage cheese, garlic powder, onion powder, salt, and black pepper. Whisk until creamy.
- Pour the egg mixture over the sautéed vegetables. Fold in some veggies with a spatula. Sprinkle crumbled feta cheese on top.
- Bake in the preheated oven for 30 minutes until set and slightly golden on top.
- Let the egg bake cool for 15-25 minutes before slicing and serving warm.
