Ingredients
  

For the Vegetables
  • 1 tablespoon Olive Oil or avocado oil for a unique taste
  • 1 cup Onion (chopped) shallots or leeks are great alternatives
  • 8 ounces Cremini Mushrooms (sliced) or white button mushrooms if needed
  • 4 ounces Baby Spinach (roughly chopped) kale can be a substitute
For the Egg Mixture
  • 6 Eggs a chickpea flour mix can be used for an egg-free version
  • 1 cup Low-Fat Cottage Cheese ricotta works well as a substitute
  • 1 teaspoon Garlic Powder fresh garlic is a good alternative
  • 1 teaspoon Onion Powder reduce fresh onion if omitted
  • 1 teaspoon Salt adjust according to preference
  • 1 teaspoon Black Pepper or red pepper flakes for heat
  • 4 ounces Feta Cheese (crumbled) goat cheese or omit for dairy-free

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly spray a 9” x 13” baking pan with nonstick cooking spray.
  2. In a large non-stick skillet, heat a tablespoon of olive oil over medium heat. Add chopped onions and sliced mushrooms along with a pinch of salt. Sauté for 6-8 minutes until onions are translucent and mushrooms are browned.
  3. Stir in chopped spinach and cook for an additional 2-3 minutes until the spinach wilts. Transfer mixture to the prepared baking pan.
  4. In a mixing bowl, combine eggs, cottage cheese, garlic powder, onion powder, salt, and black pepper. Whisk until creamy.
  5. Pour the egg mixture over the sautéed vegetables. Fold in some veggies with a spatula. Sprinkle crumbled feta cheese on top.
  6. Bake in the preheated oven for 30 minutes until set and slightly golden on top.
  7. Let the egg bake cool for 15-25 minutes before slicing and serving warm.
