Dressings
  • 1 cup Lime-Cilantro Dressing Fresh vinaigrette
  • 1 cup Thai Peanut Dressing Creamy dressing
Crunch
  • 1 cup Fried Wonton Strips Store-bought or homemade
  • 1 cup Crisp Rice Sticks Store-bought recommended
Salad Base
  • 4 cups Napa Cabbage Cut into 1/4-inch strips
  • 2 cups Red Cabbage Core and chop
  • 2 medium Carrots Peeled and julienned
  • 4 medium Scallions (Green Onions) Thinly sliced
  • 1 medium English Cucumber Peeled and julienned
Protein & Extras
  • 1 pound Grilled Garlic Chicken Cooked to perfection
  • 1/4 cup Cilantro Chopped
  • 1 cup Edamame Cooked and shelled
  • 1/2 cup Roasted Peanuts Chopped
  • 2 medium Hass Avocados Cut into 1/2-inch dice

Method
 

Preparation
  1. Prepare the Lime-Cilantro Dressing and Thai Peanut Dressing. Mix all ingredients until smooth and refrigerate for at least 30 minutes.
  2. If making homemade, prepare Fried Wonton Strips and Crisp Rice Sticks. Heat oil and fry wontons until golden brown.
  3. Grill garlic chicken until it reaches 165°F; about 6-7 minutes per side. Let it rest and cut into 1/2-inch cubes.
  4. In a large bowl, combine napa cabbage, red cabbage, carrots, scallions, cucumber, cilantro, edamame, and peanuts. Toss gently.
  5. Add cubed chicken and Lime-Cilantro Dressing, toss until well-coated.
  6. Fold in fried wonton strips carefully, then transfer salad to serving plates.
  7. Top with crisp rice sticks and drizzle with Thai Peanut Dressing. Add diced avocados before serving.
