Preparation
- Prepare the Lime-Cilantro Dressing and Thai Peanut Dressing. Mix all ingredients until smooth and refrigerate for at least 30 minutes.
- If making homemade, prepare Fried Wonton Strips and Crisp Rice Sticks. Heat oil and fry wontons until golden brown.
- Grill garlic chicken until it reaches 165°F; about 6-7 minutes per side. Let it rest and cut into 1/2-inch cubes.
- In a large bowl, combine napa cabbage, red cabbage, carrots, scallions, cucumber, cilantro, edamame, and peanuts. Toss gently.
- Add cubed chicken and Lime-Cilantro Dressing, toss until well-coated.
- Fold in fried wonton strips carefully, then transfer salad to serving plates.
- Top with crisp rice sticks and drizzle with Thai Peanut Dressing. Add diced avocados before serving.
