Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 cup honey
  • 1 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 pounds baby potatoes halved
  • 4 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine honey, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs and toss to coat evenly.
  3. Place the coated chicken thighs in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  4. While the chicken is baking, prepare the potatoes. In a large bowl, mix the halved baby potatoes with melted butter, minced garlic, salt, and pepper.
  5. Spread the potatoes on a baking sheet in a single layer and roast in the oven for 20-25 minutes, or until golden brown and tender.
  6. Remove the potatoes from the oven and sprinkle with grated Parmesan cheese and chopped parsley. Toss to combine.
  7. Once the chicken is done, let it rest for a few minutes before serving. Serve the chicken alongside the garlic Parmesan potatoes.
