Ingredients

  • 1 cup Whole Milk warm to 100°F
  • 1/4 cup Honey or maple syrup as a substitute
  • 2 1/4 teaspoons Active Dry Yeast ensure it's fresh
  • 1 whole Egg or a flax egg for vegan
  • 1 cup Pure Pumpkin Puree sweet potato puree can be an alternative
  • 3 cups All-Purpose Flour gluten-free blends work well as a substitute
  • 1 cup Bread Flour or more all-purpose flour if unavailable
  • 1 teaspoon Fine Sea Salt avoid substitutes unless necessary
  • 4 tablespoons Unsalted Butter softened, margarine can be used if needed
For the Topping
  • 1 whole Egg for egg wash
  • 1 tablespoon Water
  • 1 tablespoon Honey for the crust
  • optional Pumpkin Seeds for topping
  • optional Granulated Sugar for a sweeter shine

Method
 

Steps
  1. In a small bowl, combine warmed whole milk, active dry yeast, and honey. Whisk gently and let sit for 5 minutes until foamy.
  2. In a large bowl, whisk together all-purpose flour, bread flour, and salt.
  3. Stir in the yeast mixture, egg, and pumpkin puree. Gradually add the flour mixture and butter, mixing until smooth and elastic.
  4. Transfer the dough to a greased bowl, cover with a towel, and let it rise in a warm place for about 2 hours.
  5. Punch down the dough, divide into 12 equal pieces, shape into balls, and place on a greased pan to rise for another hour.
  6. Preheat oven to 375°F. Prepare egg wash with egg, water, and honey, brush over the rolls, and sprinkle with pumpkin seeds.
  7. Bake the rolls for 20 to 22 minutes until golden brown and hollow-sounding when tapped.
