Ingredients
  

  • 8 ounces cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tablespoons hot honey
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Parmesan cheese for garnish optional

Method
 

  1. Cook the cheese tortellini according to package instructions. Drain and set aside to cool slightly.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and fresh basil.
  3. In a separate small bowl, whisk together the olive oil, hot honey, red wine vinegar, garlic powder, salt, and pepper until well combined.
  4. Add the cooked tortellini to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld.
  6. Serve warm or at room temperature, garnished with Parmesan cheese if desired.
