- In a small saucepan, combine honey, chili flakes, Tabasco sauce, and lemon juice. Heat over medium for about 5 minutes until bubbling. Stir occasionally and cool slightly before transferring to a jar.
- Spread mayonnaise on one side of each sourdough slice. On the unbuttered side, layer Dijon mustard, brie, pear, prosciutto, and a drizzle of hot honey. Top with the other slice, mayonnaise side up.
- Heat a cast iron pan over low heat, add butter and olive oil. Once melted, place the toastie in the pan. Cook for about 10 minutes, pressing down until golden brown.
- Carefully flip the toastie, cooking the other side for 10 minutes. Aim for a beautifully browned crust with a gooey filling.
- Remove from the pan, cool for a minute, then slice in half to reveal the creamy filling. Serve hot with extra hot honey if desired.
