Ingredients
  

For the Pork Marinade
  • 1 pound Pork Tenderloin Can substitute with chicken or tofu
  • 2 stalks Lemongrass Use 1 tablespoon lemongrass paste for each stalk
  • 2 small Shallots Can replace with 1/2 yellow onion if needed
  • 2 tablespoons Fish Sauce
  • 1 tablespoon Oyster Sauce Use high-quality brands
  • 2 tablespoons Lime Juice Fresh preferred but bottled works
  • 1 tablespoon Maple Syrup Can substitute with brown sugar
  • 1 tablespoon Brown Sugar Can substitute with all maple syrup
  • 1 tablespoon Ginger Fresh preferred
  • 3 cloves Garlic Fresh preferred
  • 1 tablespoon Toasted Sesame Oil Do not substitute with regular sesame oil
  • 1 tablespoon Chili Paste Prefer Asian chili sauce like Sambal Oelek
For the Pickled Vegetables
  • 1 cup Carrots Thinly sliced
  • 1 cup Daikon Can substitute with regular radishes
  • 1 cup Rice Vinegar Use unseasoned
  • 2 tablespoons Sugar
For the Sandwich Assembly
  • 4 pieces Baguette Slice and toast for best texture
  • 1 cup Cucumber Thinly sliced
  • 1 to taste Jalapeños Adjust based on spice preference
  • 1/2 cup Cilantro Fresh
  • 1/2 cup Chili Garlic Mayonnaise Mix mayonnaise with preferred chili sauce

Method
 

Preparation
  1. In a blender, combine the lemongrass, shallots, fish sauce, oyster sauce, lime juice, maple syrup, brown sugar, ginger, garlic, toasted sesame oil, and chili paste. Blend until smooth.
  2. Slice the pork tenderloin into thin cuts and pound them. Marinate in the blender mixture for 4-8 hours.
  3. In a saucepan, combine rice vinegar, water, and sugar over medium heat. Pour over the sliced carrots and daikon in a jar and refrigerate.
  4. Preheat grill to around 400°F. Grill marinated pork for 1-2 minutes per side until browned.
  5. Slice baguettes in half and toast in a preheated oven at 375°F for 5-7 minutes.
  6. Assemble the sandwich with chili garlic mayonnaise, grilled pork, pickled vegetables, cucumber, jalapeños, and cilantro.
