Preparation
- In a blender, combine the lemongrass, shallots, fish sauce, oyster sauce, lime juice, maple syrup, brown sugar, ginger, garlic, toasted sesame oil, and chili paste. Blend until smooth.
- Slice the pork tenderloin into thin cuts and pound them. Marinate in the blender mixture for 4-8 hours.
- In a saucepan, combine rice vinegar, water, and sugar over medium heat. Pour over the sliced carrots and daikon in a jar and refrigerate.
- Preheat grill to around 400°F. Grill marinated pork for 1-2 minutes per side until browned.
- Slice baguettes in half and toast in a preheated oven at 375°F for 5-7 minutes.
- Assemble the sandwich with chili garlic mayonnaise, grilled pork, pickled vegetables, cucumber, jalapeños, and cilantro.
