Preparation Steps
- Preheat the oven to 350°F (175°C) and prepare a 9x9 square baking pan with non-stick spray or parchment paper.
- Finely crush the oatmeal cookies until you have about 1 ½ cups of crumbs. Combine with melted butter and packed brown sugar, then press into the prepared baking pan.
- Cream together the unsalted butter, granulated sugar, and packed brown sugar until smooth and fluffy, about 2-3 minutes.
- Add vanilla extract, dry milk powder, cornstarch, heavy cream, and egg yolks to the butter-sugar mixture, mixing on low speed until well combined.
- Pour the filling mixture over the crust and spread it evenly. Bake for 15 minutes until edges are lightly puffed and center is jiggly.
- Lower the oven temperature to 325°F (160°C) and bake for an additional 10-15 minutes until filling is mostly set with a slight jiggle.
- Cool the bars at room temperature for 30 minutes, then chill in the refrigerator for at least 2 hours until completely cool.
- Dust the top of the chilled bars with powdered sugar, cut into squares, and serve.
