Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a small bowl, combine diced apples, brown sugar, and cinnamon. Stir until coated.
  3. In a stand mixer, cream softened butter and brown sugar until light and fluffy. Add egg and vanilla, mix well. Gradually blend in flour, baking powder, salt, and spices, then fold in apple mixture.
  4. Using a cookie scoop, portion out 2-ounce dough balls and place 2 inches apart on baking sheets.
  5. Bake for 12-15 minutes until edges are golden and cookies are puffed but soft in the center.
  6. In a bowl, whisk powdered sugar, maple syrup, milk, and a pinch of salt until smooth. Adjust thickness as needed.
  7. Drizzle glaze over warm cookies. Let set for about 10 minutes before serving.
