  • 2 cups cooked chicken shredded
  • 1/2 cup Korean BBQ sauce
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced cucumbers
  • 1/4 cup chopped green onions
  • 1/4 cup cilantro leaves
  • 1 tablespoon sesame seeds
  • 1 lime cut into wedges

Method
 

  1. In a medium bowl, combine the shredded chicken and Korean BBQ sauce. Mix well until the chicken is evenly coated. Let it marinate for at least 15 minutes for the flavors to meld.
  2. While the chicken is marinating, prepare the toppings. In a separate bowl, mix the shredded cabbage, diced cucumbers, and chopped green onions. Set aside.
  3. Heat a skillet over medium heat. Warm the tortillas for about 30 seconds on each side until they are pliable.
  4. Once the chicken is marinated, heat it in the skillet over medium heat for about 5 minutes, stirring occasionally, until heated through.
  5. To assemble the tacos, place a generous portion of the BBQ chicken on each tortilla. Top with the cabbage, cucumber, and green onion mixture. Sprinkle with cilantro and sesame seeds.
  6. Serve immediately with lime wedges on the side for squeezing over the tacos.
