Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef for about 7-10 minutes, then drain any excess fat.
- Stir in the taco seasoning and the specified amount of water, simmer for about 5 minutes until thick.
- In a mixing bowl, combine the refried beans, black beans, and corn, and mix thoroughly.
- Place two tortillas in the prepared baking dish, trimming if necessary.
- Spread one-third of the bean mixture over tortillas, add half of the seasoned beef, salsa, and a layer of cheese. Repeat this process two more times.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Let cool for 5-10 minutes, garnish with fresh cilantro if desired, and serve warm.
