  • 6 pieces Flour Tortillas Corn tortillas are an alternative but will yield a firmer texture.
  • 2 cups Cheddar Cheese Substitute with Monterey Jack or a cheese blend for variety.
For Garnishing
  • 1 cup Fresh Cilantro (optional) Omit if you prefer a milder flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef for about 7-10 minutes, then drain any excess fat.
  3. Stir in the taco seasoning and the specified amount of water, simmer for about 5 minutes until thick.
  4. In a mixing bowl, combine the refried beans, black beans, and corn, and mix thoroughly.
  5. Place two tortillas in the prepared baking dish, trimming if necessary.
  6. Spread one-third of the bean mixture over tortillas, add half of the seasoned beef, salsa, and a layer of cheese. Repeat this process two more times.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
  8. Let cool for 5-10 minutes, garnish with fresh cilantro if desired, and serve warm.
