  • 1 cup Walnuts finely chopped
  • 1 tablespoon Chia Seeds optional
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt use sparingly
For the Flavor
  • 1/2 cup Nut Butter Cashew, Almond, or Sunbutter
  • 1/4 cup Honey can use Maple Syrup for Vegan
  • 1/4 cup Lemon Juice
  • Zest of 2 lemons Lemon Zest fresh zest preferred
  • 1 teaspoon Vanilla Extract
  • 1 large Egg can substitute with Flax Egg for Vegan

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking pan with parchment paper.
  2. In a large mixing bowl, combine oats, oat flour, walnuts, chia seeds, baking soda, and salt. Whisk together.
  3. In a separate bowl, whisk together nut butter, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and egg (or flax egg).
  4. Pour the wet mixture into the dry ingredients and stir until fully incorporated.
  5. Use a cookie scoop to drop rounded portions onto the prepared baking pan, spacing them two inches apart. Flatten each scoop gently.
  6. Bake for 9-11 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
