  • 2 tablespoons Extra Virgin Olive Oil Substitute with regular olive oil if needed

  • 1/4 cup Grated Parmesan Cheese Skip for a vegan version
  • 2 cloves Garlic Finely grated
  • 1/4 cup Fresh Parsley Can substitute with basil or arugula

  • 1 tablespoon Lemon Zest Use fresh lemons for best flavor
  • 3 tablespoons Lemon Juice Freshly squeezed juice preferred
  • 1 tablespoon Additional Lemon Juice For drizzling after baking

  • 1 teaspoon Fine Salt Kosher or sea salt can be used

Method
 

Step-by-Step Instructions for Lemon Pizza
  1. Prepare the pizza dough according to your recipe up to step 5. Shape into a ball and let it rest for 10 minutes.
  2. Slice fresh mozzarella into ½ inch thick pieces and pat dry to prevent sogginess.
  3. Roll out the dough on parchment paper until it measures approximately 9x13 inches. Transfer to a pizza peel or rimmed baking sheet.
  4. Combine olive oil, water, chopped parsley, grated garlic, lemon zest, lemon juice, salt, and pepper in a jar. Shake until mixed.
  5. Dimple the rolled dough with your fingertips. Drizzle lemon brine evenly over it and add mozzarella slices on top.
  6. Preheat pizza stone to 450°F (230°C) for 30 minutes. Bake pizza for 8-10 minutes or until cheese is golden.
  7. Remove from oven and drizzle with more lemon juice, sprinkle with grated Parmesan, parsley, and black pepper. Slice and serve.
