Step-by-Step Instructions
  1. Preheat your oven to 345°F (175°C) and line a 9-inch round cake pan with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, and baking soda; whisk until blended.
  3. In a liquid measuring cup, mix together the milk, Limoncello, and lemon juice until combined.
  4. In another bowl, rub sugar with lemon zest, then add eggs and beat until fluffy.
  5. Gradually mix in olive oil, then add the wet ingredients and beat until combined.
  6. Slowly add the dry mixture and mix until just combined.
  7. Pour batter into prepared pan and bake for 40 to 50 minutes. Check with a toothpick.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Spread mascarpone frosting on top of the cooled cake and finish with lemon curd.
