- Preheat your oven to 375°F (190°C). Prepare a baking sheet or a broiler-safe skillet by lightly greasing it or lining it with parchment paper.
- Butterfly each boneless chicken breast by slicing horizontally, ensuring you cut only halfway through. Season the chicken generously inside and out with kosher salt and black pepper.
- Layer thinly sliced Honeycrisp apples and creamy brie cheese inside each butterflied chicken breast.
- Close up the stuffed chicken breasts and place them in the prepared dish. Bake for 25-30 minutes, or until the chicken is nearly cooked through.
- Combine apple cider, pure maple syrup, minced garlic, Dijon mustard, and fresh thyme in a small skillet over medium heat. Allow to simmer gently for about 12-15 minutes until it reduces by half.
