  • 1 teaspoon Urfa Biber Optional
  • 1/3 cup Extra Virgin Olive Oil High-quality
Salad Ingredients
  • 1 cup Lentils Green or black
  • 1 leaf Bay Leaf Remove before mixing
  • 1 large English Cucumber Cut into large pieces
  • 1 each Red Bell Pepper Diced
  • 1 each Orange Bell Pepper Diced
  • 3 stems Green Onions Chopped
  • 1/4 cup Fresh Parsley Chopped
  • 1/4 cup Fresh Mint Chopped

Method
 

Dressing Preparation
  1. Whisk lemon juice, minced garlic, kosher salt, black pepper, and optional Urfa Biber in a bowl. Gradually add olive oil while whisking.
Lentil Cooking
  1. In a large pot, combine rinsed lentils and bay leaf with water. Boil, then simmer for 20-25 minutes until tender. Drain and cool slightly.
Combine Ingredients
  1. Add warm lentils to the dressing and stir gently. Let sit for a few minutes.
Add Vegetables and Herbs
  1. Stir in chopped cucumber, diced bell peppers, and green onions. Fold in parsley and mint, tossing gently.
Final Taste Adjustment
  1. Taste the salad, adjusting seasoning if necessary with salt, pepper, or lemon juice.
