Method
 

Step-by-Step Instructions
  1. Pat the filet mignon dry with paper towels, season both sides with kosher salt and black pepper.
  2. Heat neutral oil in a skillet over medium-high heat and sear the filet mignon for 1-2 minutes on each side.
  3. Let the beef cool for 5 minutes, then wrap in plastic wrap and refrigerate for at least 2 hours.
  4. Whisk yuzu juice, soy sauce, ginger, sugar, and onion in a bowl until sugar is dissolved.
  5. Slice garlic thinly and fry in neutral oil until golden brown. Drain and sprinkle with salt.
  6. Slice the chilled filet against the grain, serve on a plate with ponzu sauce and garlic chips.
