  • 1/2 cup Almond Flour can substitute with coconut flour
  • 1/4 teaspoon Sea Salt or Himalayan salt
  • 1/4 cup Almond Butter or peanut butter
For the Coating
  • 1 cup Vegan Dark Chocolate Chips ensure dairy-free
  • 2 tablespoons Coconut Oil neutral oil can be used

Method
 

Step-by-Step Instructions
  1. Prepare the Baking Dish: Line a quarter baking sheet or brownie dish with parchment paper.
  2. Blend the Date Mixture: In a blender, combine soaked dates and coconut milk until smooth. Add almond butter, almond flour, and sea salt; blend until creamy.
  3. Spread and Freeze: Pour the caramel mixture into the lined dish and freeze for at least 1 hour.
  4. Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals until smooth.
  5. Cut and Coat Caramels: Cut the solidified caramel into squares, dip each in melted chocolate, and place back on the lined tray.
  6. Set Coating: Sprinkle with flaky sea salt and return to the freezer for about 20 minutes to harden.
  7. Store: Transfer caramels to an airtight container and store in the freezer until ready to serve.
