Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 can 14.5 ounces diced tomatoes with green chilies
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. In a small bowl, mix together the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Sprinkle the spice mixture over the onions and garlic, stirring to combine.
  3. Add the chicken breasts to the skillet, followed by the chicken broth and diced tomatoes with green chilies. Bring the mixture to a simmer.
  4. Cover the skillet and reduce the heat to low. Cook for 25-30 minutes, or until the chicken is cooked through and easily shreds with a fork.
  5. Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet, mixing it with the sauce. Cook for an additional 5 minutes to allow the flavors to meld.
  6. Warm the tortillas in a dry skillet or microwave. Assemble the tacos by placing a generous portion of the pulled chicken on each tortilla. Top with shredded lettuce, diced tomatoes, cheese, and cilantro. Serve with lime wedges on the side.

Notes
