Ingredients
  

For the Batter
  • 500 g Mixed Dried Fruit sultanas, raisins, cranberries, apricots
  • 150 ml Brandy or sherry, dark rum, or tea for alcohol-free option
  • 50 ml Cointreau optional
  • 50 ml Kirsch optional
  • 250 g Butter unsalted, softened
  • 200 g Dark Brown Soft Sugar or light brown sugar, muscovado
  • 4 large Eggs at room temperature
  • 1 tsp Vanilla Extract
  • 250 g Plain Flour substitute with gluten-free blend
  • 100 g Ground Almonds or more flour if nut-free
  • 1 tsp Baking Powder
  • 1 tsp Mixed Spice or pumpkin spice
  • 100 g Glace Cherries chopped for even distribution

Method
 

Baking Instructions
  1. Soak the mixed dried fruits in brandy for 24 hours.
  2. Preheat the oven to 120°C (275°F). Grease an 8-inch cake tin and line it with parchment paper.
  3. Cream together butter and dark brown sugar until fluffy.
  4. Incorporate eggs one at a time and add vanilla extract.
  5. Sift together flour, ground almonds, baking powder, mixed spice, cinnamon, nutmeg, and cloves.
  6. Fold dry ingredients into the butter mixture and then fold in the soaked fruits and chopped cherries.
  7. Pour batter into the prepared tin and bake for 3½ hours.
  8. Once baked, poke holes in the cake and drizzle with extra brandy. Cool completely before wrapping.

Notes
