Baking Instructions
- Soak the mixed dried fruits in brandy for 24 hours.
- Preheat the oven to 120°C (275°F). Grease an 8-inch cake tin and line it with parchment paper.
- Cream together butter and dark brown sugar until fluffy.
- Incorporate eggs one at a time and add vanilla extract.
- Sift together flour, ground almonds, baking powder, mixed spice, cinnamon, nutmeg, and cloves.
- Fold dry ingredients into the butter mixture and then fold in the soaked fruits and chopped cherries.
- Pour batter into the prepared tin and bake for 3½ hours.
- Once baked, poke holes in the cake and drizzle with extra brandy. Cool completely before wrapping.
