Method
 

Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C).
  2. On a large, rimmed sheet pan, combine the shelf-stable gnocchi, diced delicata or butternut squash, halved Brussels sprouts, and red onion. Spread evenly across the pan.
  3. Sprinkle the minced garlic, lemon zest, kosher salt, black pepper, and optional red pepper flakes over the mixture. Mix thoroughly.
  4. Drizzle extra-virgin olive oil over the mixture and toss briefly.
  5. Remove casings from the Italian sausage and scatter over the pan.
  6. Place the sheet pan in the preheated oven and roast for 25 to 30 minutes.
  7. Remove the pan from the oven and top with burrata. Drizzle with pesto sauce if using.
