  • 1/2 tsp Turmeric
  • 1/2 tsp Ground Cardamom Garam masala can substitute.
  • 1/2 tsp Chili Flakes Adjust for spice level.

For the Cooking Base
  • 2 tbsp Olive Oil Avocado oil is an alternative.
  • 1 medium Onion Halved & finely sliced.
  • 3 cloves Garlic Crushed, fresh recommended.
For the Rice and Broth
  • 1.5 cups Uncooked Long Grain Rice Jasmine or basmati can substitute.
  • 3 cups Chicken Stock Opt for gluten-free if needed.
For the Garnish
  • 1/4 cup Fresh Parsley Chopped, cilantro or mint as alternatives.
  • 1 tbsp Dried Dill Feel free to experiment.

Step-by-Step Instructions
  1. Prepare the chicken by cutting thighs into bite-sized pieces, marinating with spices and lemon juice for at least 15 minutes.
  2. Sear marinated chicken pieces in a large frying pan with olive oil, cook until golden-brown, and add onion and garlic.
  3. Stir in rice and sauté for about 1 minute. Pour in hot chicken stock, ensuring it's well covered.
  4. Reduce heat, cover the pan and let simmer for about 12 minutes without stirring.
  5. Remove from heat, let sit covered for 5 minutes, then fold in parsley and dill.
  6. Serve garnished with extra herbs and enjoy with a side salad or pita.
