Step-by-Step Instructions
  1. Season chicken generously with salt, pepper, smoked paprika, Italian seasoning, and garlic powder, then let it rest for 10 minutes.
  2. Heat olive oil in a large pot over medium-high heat, sear chicken for 5-7 minutes per side until golden brown, then set aside.
  3. In the same pot, sauté minced garlic, yellow and green peppers over medium heat for 3-4 minutes until softened.
  4. Stir in jasmine rice, coconut milk, chicken broth, soy sauce, and brown sugar, and mix well for 2-3 minutes.
  5. Nestle the seared chicken back into the pot, bring to a simmer, reduce heat to low, cover, and cook.
  6. Simmer on low for about 30 minutes, checking occasionally to prevent sticking, and add more broth if necessary.
  7. Once rice is fluffy and chicken cooked through, fluff rice and adjust seasoning before serving warm.
