Ingredients

  • 4 chicken thighs bone-in, skin-on
  • 4 chicken drumsticks
  • 1 cup barbecue sauce your favorite brand
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top.
  2. In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to create a seasoning paste.
  3. Add the chicken thighs and drumsticks to the bowl, ensuring they are well-coated with the seasoning paste.
  4. Place the seasoned chicken on the wire rack, skin side up. This allows the heat to circulate and helps the skin get crispy.
  5. Roast the chicken in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  6. During the last 10 minutes of cooking, brush the chicken with barbecue sauce, reserving some for serving.
  7. Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. Serve with extra barbecue sauce on the side.

Notes

  • For a spicier kick, add a teaspoon of cayenne pepper to the seasoning mix or use a spicy barbecue sauce.
  • You can substitute chicken breasts for thighs and drumsticks if you prefer white meat, but adjust the cooking time as breasts may cook faster.
