  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1/2 cup peanuts chopped
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic minced

Method
 

  1. In a large bowl, combine the salad greens, chicken, bell pepper, cucumber, carrots, peanuts, green onions, and cilantro.
  2. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and garlic until smooth.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately, garnished with additional peanuts and cilantro if desired.
