Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 pound ground pork
  • 1 cup finely chopped green onions divided
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 package 14 ounces frozen potstickers (chicken or pork)
  • 1 cup baby bok choy chopped
  • 1 cup sliced mushrooms
  • Salt and pepper to taste
  • Chopped cilantro for garnish optional

Method
 

  1. In a large pot, heat the vegetable oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  2. Stir in half of the chopped green onions, garlic, and ginger. Cook for an additional 2-3 minutes until fragrant.
  3. Pour in the chicken broth and water, then add the soy sauce and sesame oil. Bring the mixture to a boil.
  4. Once boiling, add the frozen potstickers to the pot. Reduce heat to a simmer and cook for about 8-10 minutes, or until the potstickers are heated through.
  5. Add the chopped bok choy and sliced mushrooms to the pot. Simmer for another 3-5 minutes until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with the remaining green onions and cilantro if desired.
