In a large pot, heat the vegetable oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
Stir in half of the chopped green onions, garlic, and ginger. Cook for an additional 2-3 minutes until fragrant.
Pour in the chicken broth and water, then add the soy sauce and sesame oil. Bring the mixture to a boil.
Once boiling, add the frozen potstickers to the pot. Reduce heat to a simmer and cook for about 8-10 minutes, or until the potstickers are heated through.
Add the chopped bok choy and sliced mushrooms to the pot. Simmer for another 3-5 minutes until the vegetables are tender.
Season with salt and pepper to taste.
Serve hot, garnished with the remaining green onions and cilantro if desired.
