- Start by measuring 1 tablespoon of chia seeds and mixing them with 2 tablespoons of water in a small bowl. Allow the mixture to sit for about 10 minutes; during this time, it will form a gel-like consistency.
- Once the chia seeds have soaked, transfer the chia gel to a blender alongside 1 cup of fresh or thawed raspberries and 2 tablespoons of maple syrup or honey for sweetening. Blend for 10-15 seconds, just enough to achieve a smooth but slightly chunky texture.
- Pour the blended mixture into a clean glass jar, ensuring to scrape down the sides to catch every bit. Leave some space at the top as the jam will expand slightly as it sets.
- Seal the jar with a lid and refrigerate for at least 1 hour to thicken further.
- After the jam has chilled and thickened, it’s ready to be enjoyed! Spread on toast, pancakes, or mix into yogurt.
