Preparation Steps
  1. Preheat your oven to 400°F (200°C). Slice firm apples into wedges and spread on a baking sheet. Roast for about 20 minutes, turning halfway through.
  2. In a skillet, cook bacon strips over medium heat until crispy, about 6-8 minutes. Drain on paper towels.
  3. Using reserved bacon fat, fry pecans over medium heat until toasted, about 3-4 minutes. Alternatively, use olive oil.
  4. In the same skillet, sauté sliced shallots on low heat for about 5 minutes until golden. Add maple syrup and apple cider vinegar, simmer for 2-3 minutes.
  5. In a salad bowl, mix arugula and kale with warm roasted apples, bacon, blue cheese, and pecans. Toss gently to combine.
  6. Drizzle the vinaigrette over the salad and toss lightly to coat all ingredients evenly.
