In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Set aside to cool slightly.
Flatten each slice of bread with a rolling pin. Place a tablespoon of the cooked sausage at one end of each slice and roll it up tightly.
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon.
Heat a non-stick skillet over medium heat and add a little butter or cooking spray to coat the pan.
Dip each rolled-up bread in the egg mixture, ensuring it is fully coated.
Place the rolled bread seam-side down in the skillet and cook for about 2-3 minutes on each side, or until golden brown.
Once cooked, remove from the skillet and roll in granulated sugar to coat.
Serve warm with maple syrup drizzled on top.
