  • 1 pound ground chicken
  • 1 cup cooked black rice
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon olive oil for cooking
  • 1 cup marinara sauce for serving

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, cooked black rice, Parmesan cheese, breadcrumbs, parsley, egg, garlic, onion powder, salt, black pepper, smoked paprika, and red pepper flakes (if using). Mix until well combined.
  3. Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Drizzle the olive oil over the meatballs to help them brown.
  5. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  6. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  7. Once the meatballs are done, serve them hot with the marinara sauce drizzled on top or on the side for dipping.
