Recipe Instructions
  1. Begin by grating 2 cups of raw pumpkin. Squeeze out excess moisture and transfer to a medium mixing bowl.
  2. Add chopped onion, egg, grated Parmesan cheese, flour, salt, pepper, and parsley. Stir until fully combined.
  3. Form mixture into 6 patties, about half an inch thick.
  4. Heat 1-2 tablespoons of olive oil in a large frying pan over medium to medium-high heat.
  5. Carefully add 3 fritters at a time to the hot oil, frying for 3-4 minutes per side until golden brown.
  6. Remove fritters from the pan and place on a paper towel-lined plate to absorb excess oil.
