  • 1 pound ground turkey
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Pecorino Romano cheese
  • 1/4 cup fresh basil finely chopped
  • 2 cloves garlic finely minced
  • 1 large egg
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/4 teaspoon cayenne pepper optional
  • 1/4 cup buttermilk
  • 1 tablespoon avocado oil for frying

Method
 

  1. Preheat your oven to 400°F (200°C) and prepare a baking tray with parchment paper.
  2. In a mixing bowl, combine ground turkey, panko breadcrumbs, Pecorino Romano cheese, chopped basil, minced garlic, egg, sea salt, black pepper, thyme, rosemary, and cayenne pepper if desired.
  3. Gently fold in the buttermilk until just blended, avoiding overmixing.
  4. Shape the mixture into small balls, roughly the size of a golf ball, and arrange them on the prepared baking sheet.
  5. Lightly coat the meatballs with avocado oil.
  6. Bake in the oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
