Preparation Steps
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or nonstick spray.
- Thinly slice the russet potatoes and layer them at the bottom of the baking dish. Drizzle with olive oil.
- Brown the lean ground beef in a skillet over medium heat for 6-8 minutes, then distribute over the potato layer.
- Slice the onion and place the rings evenly over the beef layer.
- Slice the tomatoes and layer them over the onion.
- Chop the green bell peppers and sprinkle them over the tomatoes. Season each layer with salt and pepper.
- Cover with aluminum foil and bake for 2 hours.
- Remove the foil and let the casserole cool for a few minutes before serving.
