  • 2 cups tomatoes Fresh or canned diced tomatoes.
  • 1 large green bell pepper Any color works for variation.
  • to taste kosher salt

  • 2 tbsp olive oil Can substitute with canola or avocado oil.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or nonstick spray.
  2. Thinly slice the russet potatoes and layer them at the bottom of the baking dish. Drizzle with olive oil.
  3. Brown the lean ground beef in a skillet over medium heat for 6-8 minutes, then distribute over the potato layer.
  4. Slice the onion and place the rings evenly over the beef layer.
  5. Slice the tomatoes and layer them over the onion.
  6. Chop the green bell peppers and sprinkle them over the tomatoes. Season each layer with salt and pepper.
  7. Cover with aluminum foil and bake for 2 hours.
  8. Remove the foil and let the casserole cool for a few minutes before serving.
